With the holiday weekend in our crosshairs, I imagine many of you are dreaming of cooking the perfect steak on your grill while you slowly slip into a alcohol-induced patriotic coma. But this isn’t just a simple hot dog or burger we’re talking about here, steaks are a classy lady. And if you don’t respect the succulent hunk of meat you could end up overpaying for an overcooked mess of a meal.

A tender steak will generally cost more than a tough steak. And whereas a tender steak requires less seasoning (often salt and pepper will suffice) tougher steaks require some sort of spicy rub all over to get the flavor up to snuff.
And for those of you who would rather heat your steak on the grill, the same searing times apply, and with steaks thicker than 1 inch, simply finish cooking it over indirect heat (so in an area with no charcoal or with the gas burner turned off). You’ll experience the same great results, but with the added bonus of a grilled, smoky flavor.
